As a first step we are going to start with making the caramel, this will be done with the sugar. We place it in a pot with a cup of water over low heat and let it cook and begin to take on a golden color characteristic . Then we will gradually incorporate the hazelnuts, after this we add the sesame oil and butter to the mixture.
As a next step we are going to wash the Chinese eggplants very well and then chop them in half and make some small incisions on top, this is known as chiselling. Then we brown the eggplants in a frying pan at a high heat.
Once this procedure is done, we remove the eggplants from this pan and then place the garlic, chili pepper and ginger, minced into very small pieces, in the same pan. We proceed to place all the sauces and let them cook until they reach the point where their texture is dense and thick. Be sure not to burn anything, and adjust your heat accordingly.
After this, we place the eggplants once more in the pan to begin to glaze them for a few minutes with the caramel and to finish we add a little lemon zest according to our taste and preference.
As for the turnips, these should be washed very well, then cut into a cylinder shape. So that you can make this type of cut, we recommend using a kitchen corer. Now we proceed to glaze them and add the eggplant preparation that we started to make at the beginning.
